Skillet Chicken and Rice
Quick, easy, and cheap perfectly describe this meal. Change up the seasoning mix to suit your taste!
Ingredients
- 2 tsp oil
- ¾ lb chicken breast (fresh, cut into bite-size pieces)
- 1 small onion (chopped)
- 1 tsp seasoning blend (your choice)
- 1 pkt chicken gravy mix
- ½ cup parboiled rice
- 2 cups water
- 1â…“ cups frozen vegetables
Instructions
- Cut the chicken into bite-size pieces and sprinkle with the seasoning mix.
- Heat oil in 10" sauté pan with a tightly fitting lid.
- Add the chicken and onion, and cook, stirring often, until onion is translucent and chicken is lightly browned. (If your seasoning mix is in danger of burning, add ¼ cup of water at any point.)
- In the meantime, combine the gravy mix with the water and stir to dissolve thoroughly. Set aside, but leave whatever you use to stir with in the container.
- Add the frozen vegetables and stir to combine.
- Add the rice and stir to combine.
- Give the water and gravy mix combination a stir and pour into the pan.
- Cook until boiling, stirring frequently. Reduce heat to low and cover with a tightly fitting lid.
- Cook for 20 to 25 minutes until the rice is fully cooked, lifting the lid and stirring occasionally.
- Once the rice is fully cooked, taste and adjust the seasoning. Then turn off the heat, replace the lid, and allow to sit for five minutes.
- Stir once more and serve.
