¾lbchicken breast(fresh, cut into bite-size pieces)
1smallonion(chopped)
1tspseasoning blend(your choice)
1pktchicken gravy mix
½cupparboiled rice
2cupswater
1⅓cupsfrozen vegetables
Instructions
Cut the chicken into bite-size pieces and sprinkle with the seasoning mix.
Heat oil in 10" sauté pan with a tightly fitting lid.
Add the chicken and onion, and cook, stirring often, until onion is translucent and chicken is lightly browned. (If your seasoning mix is in danger of burning, add ¼ cup of water at any point.)
In the meantime, combine the gravy mix with the water and stir to dissolve thoroughly. Set aside, but leave whatever you use to stir with in the container.
Add the frozen vegetables and stir to combine.
Add the rice and stir to combine.
Give the water and gravy mix combination a stir and pour into the pan.
Cook until boiling, stirring frequently. Reduce heat to low and cover with a tightly fitting lid.
Cook for 20 to 25 minutes until the rice is fully cooked, lifting the lid and stirring occasionally.
Once the rice is fully cooked, taste and adjust the seasoning. Then turn off the heat, replace the lid, and allow to sit for five minutes.
Stir once more and serve.
