Equipment

Ingredients
  

  • 3-5 green onions (sliced, tops and bottoms separated)
  • 2 tbsp butter
  • 1 tsp onion powder
  • 1 tsp granulated garlic
  • cups baking mix
  • ½ cup milk
  • 1 egg (large)
  • 3 oz. smoked cheese (grated, divided)
  • 1 tsp chipotle chili powder (optional)
  • 2 tbsp butter (melted, optional)

Instructions
 

  • Preheat your oven to 400℉ (200 ℃), and grease the baking pan.
  • Melt two tablespoons of the butter over medium heat. Add the green onion bottoms and sauté until tender and lightly browned.
  • In a medium bowl, combine the onion powder, granulated garlic, baking mix, and chipotle powder, if using.
  • Add the egg and the milk and stir to combine.
  • Add in the onion-butter mixture, the tops of the green onions, and all but a couple of tablespoons of the grated cheese and stir to combine.
  • Transfer to the greased baking pan and spread in an even layer. (Batter will get thick as it sits.)
  • Bake, uncovered, for 20 minutes (±2 minutes), or until a toothpick inserted in the center comes out clean. Cut into squares and serve warm.
  • Optional: melt two tablespoons of butter and pour over the top before cutting and serving.
