Smoky Onion Cheese Biscuits

- 1 baking pan (8" x 8")
Ingredients
- 3-5 green onions (sliced, tops and bottoms separated)
- 2 tbsp butter
- 1 tsp onion powder
- 1 tsp granulated garlic
- 1½ cups baking mix
- ½ cup milk
- 1 egg (large)
- 3 oz. smoked cheese (grated, divided)
- 1 tsp chipotle chili powder (optional)
- 2 tbsp butter (melted, optional)
Instructions
- Preheat your oven to 400℉ (200 ℃), and grease the baking pan.
- Melt two tablespoons of the butter over medium heat. Add the green onion bottoms and sauté until tender and lightly browned.
- In a medium bowl, combine the onion powder, granulated garlic, baking mix, and chipotle powder, if using.
- Add the egg and the milk and stir to combine.
- Add in the onion-butter mixture, the tops of the green onions, and all but a couple of tablespoons of the grated cheese and stir to combine.
- Transfer to the greased baking pan and spread in an even layer. (Batter will get thick as it sits.)
- Bake, uncovered, for 20 minutes (±2 minutes), or until a toothpick inserted in the center comes out clean. Cut into squares and serve warm.
- Optional: melt two tablespoons of butter and pour over the top before cutting and serving.
