Instructions
Preheat your oven to 400℉ (200 ℃), and grease the baking pan.
Melt two tablespoons of the butter over medium heat. Add the green onion bottoms and sauté until tender and lightly browned.
In a medium bowl, combine the onion powder, granulated garlic, baking mix, and chipotle powder, if using.
Add the egg and the milk and stir to combine.
Add in the onion-butter mixture, the tops of the green onions, and all but a couple of tablespoons of the grated cheese and stir to combine.
Transfer to the greased baking pan and spread in an even layer. (Batter will get thick as it sits.)
Bake, uncovered, for 20 minutes (±2 minutes), or until a toothpick inserted in the center comes out clean. Cut into squares and serve warm.
Optional: melt two tablespoons of butter and pour over the top before cutting and serving.
