It’s really a stew, but the slow cooker takes care of most of the work.
Country Slow Cooker Casserole
An easy hearty meal with stuff you have in the pantry.
Equipment
- 1 slow cooker (or Crock-Pot)
Ingredients
- 4 potatoes (large, peeled, chopped (approximately 5 cups))
- 3 carrots (large, sliced (approximately 2 cups))
- 1 16-oz. can peas (drained)
- 2 stalks celery (chopped (approximately 1 cup))
- 2 onions (medium, chopped)
- 1 13 oz. pkg smoked sausage (chopped)
- 1 10.5 oz can cream of chicken soup
- ½ cup chicken stock
- 3 Tbs flour (all purpose)
- 1 tsp mixed herbs
- 1 tsp salt
- ½ tsp black pepper (freshly ground)
- ½ cup chicken stock (optional)
- 3 Tbs flour (all purpose, optional)
- 4 ounces extra sharp cheddar cheese (shredded)
Instructions
- Prepare the vegetables and chop the sausage.
- Grease a 4-quart slow cooker or crock pot.
- Add the vegetables in the order given.
- Add the meat on top of the vegetables.
- Combine the soup, chicken stock, flour, and seasonings.
- Pour over the other ingredients.
- Put the lid on and cook on LOW for 3 hours.
- After three hours, lift the lid and stir the contents. If it seems a little too dry, combine the additional flour and chicken stock, and add, stirring until everything is combined.
- Put the lid back on and continue to cook an additional 2-3 hours until everything is tender.
- Check after four hours, and if it seems too watery, prop the lid up to allow steam to escape for the final cooking.
- Just before serving, add in the shredded cheese and stir it in until it is melted.
Notes
In place of the smoked ham, you can also use leftover turkey or ham, or a pound of ground beef or sausage that you have browned and drained.
