Cowboy Hot Pot
Looking for a quick dinner that's different? Try a delicious cowboy hot-pot, just perfect for cold weather!
Ingredients
- 1/2 pound ground beef
- 1 pound potatoes (peeled and cut up)
- 2 small onions (finely diced)
- 2 medium carrots (peeled and sliced)
- 2 cups beef stock
- 2 cups water
- 2 tbsp tomato paste
- 3 bay leaves
- 1 15.25 oz can whole kernel corn
- 1 28 oz can baked beans
- 2 tsp black pepper
- 1 tbsp Worcestershire sauce
- 1 packet onion soup mix
- 1/4 cup cold water
- 1/4 cup corn starch
Instructions
- Brown the ground beef in a large Dutch oven over medium heat. Remove any extra fat.
- Add the onions, and cook, stirring constantly, until the onions are softened and have deglazed the pan.
- Add the tomato paste and continue to cook, stirring constantly, for approximately one minute.
- Add the beef broth, Worcestershire sauce, bay leaves, and black pepper, and soup mix, and stir to combine.
- Add the carrots, and cook for five to ten minutes.
- Add the water and the potatoes. Reduce heat to medium-low and cook until potatoes are tender.
- In the meantime, combine the corn starch and 1/4 cup water to form a slurry.
- Add the corn (undrained) and the baked beans and corn starch slurry and bring to a simmer. Serve.
Notes
There are a lot of ways you can change up this recipe:
- You can use more ground beef. This is a budget version of this recipe.
- Substitute any sausage you like for the ground beef.
- Add other root vegetables along with the carrots.
- Add celery along with the potatoes.
- Use a different brand of baked beans.
