Sloppy Joe Soup
It's the best of both summer and autumn!
Ingredients
- 1 pound ground beef
- ½ cup onion, finely chopped
- ½ cup green bell pepper, finely chopped
- 2 carrot, chopped (approximately ⅔ cup)
- 2 cups beef broth
- ⅔ cup water
- 1 can sloppy joe mix
- 1 cup macaroni
- 1 cup beef broth (if making soup instead of stew)
- 1 cup water (if making soup instead of stew)
Instructions
- Brown the ground beef over medium heat and drain if necessary.
- Add the onions, carrots, and green pepper and cook, stirring often, until vegetables are tender.
- Add sloppy joe mix, 2 cups beef broth, and ⅔ cup water. Stir well, and bring to a boil.
- Add the macaroni, stir well, and bring to a boil.
- Reduce heat to a simmer, cover, and cook for 15-20 minutes, stirring occasionally until macaroni is cooked through.
- If making soup, rather than stew, add the additional cup of beef broth and water, stir to combine, and heat through.
- Serve with hearty bread.
