Equipment

  • 1 Instant Pot (4-quart)

Ingredients

  • 2 cups pinto beans (sorted and rinsed)
  • 4 slices bacon (chopped)
  • 5 cups water

Instructions

  • Turn the Instant Pot on to "sautè". Add the bacon.
  • Cook the bacon, stirring often, until it has released a fair amount of fat.
  • Press "Cancel" on the Instant Pot and add five cups of water.
  • Place the lid on the Instant Pot, set the valve to "Sealing", and cook on high pressure for 45 minutes.
  • At the end of 45 minutes, allow it to natural release for 10-15 minutes.
  • Release the pressure and remove the lid.
  • If the beans seem to be very watery, set the Instant Pot to "Sautè" and cook until the water is reduced.
  • Use a potato masher or an immersion blender to mash the beans.
