Ingredients

  • 1 tbsp chicken bouillon
  • 1 tbsp onion powder
  • 2 tsp chili powder (ancho or chipotle)
  • 2 tsp granulated garlic
  • 1 tsp smoked paprika
  • 1 tsp cumin (ground)
  • ½ tsp Mexican oregano

Instructions

  • Mix all ingredients together. Store in a tightly covered container.
  • Add 1-3 teaspoons when cooking beans from dried, or sprinkle over prepared beans in place of salt.

Notes

Regular chili powder is actually a mixture of several different ingredients. Ancho or chipotle chili powder is just ground ancho or chipotle peppers. If you can't find a single-chili powder, feel free to substitute regular chili powder. Ancho chili powder is smoky and mild, and will enhance the smokiness of the pinto beans, while chipotle chili powder is both smoky and spicy.
Mexican oregano is not related to Greek or Italian oregano at all, and has a completely different flavor. You can substitute Greek or Italian if you cannot find Mexican oregano, but I recommend leaving it out entirely if you can't find it.
