Ingredients
  

  • 12 oz ham (cut into ½" pieces — about 2½ cups)
  • 2/3 cup mayonnaise
  • 2 Tbsp gherkin pickles (4-5 whole)
  • 1 tsp dijon mustard
  • 1/2 tsp onion powder

Instructions
 

  • Cut up the gherkins and mince them in your food processor. Remove them to a bowl.
  • Cut the ham into small pieces and mince it finely in your food processor, working in small batches. Add to the bowl.
  • Add the onion powder and mustard.
  • Add the mayonnaise in stages, adding just enough to hold the spread together and keep it moist.
  • Place in a serving bowl and cover with cling film. Refrigerate at least four hours to allow the flavors to develop.
  • Serve with crackers or vegetables.

Notes

The recipe calls for 2/3 cup of mayonnaise, but you may not need all of that, depending on how moist your ham and pickles are. The nutrition information is based on the 2/3 cup, however.
You can also make this with corned beef or roast beef if you don't eat ham.
